GROUND BEEF CASSEROLE
INGREDIENTS:
2 cups uncooked noodles of choice
2 Tablespoons unsalted butter
1 Tablespoon minced garlic
2 teaspoons fresh thyme
1 cup finely diced onion
1 pound Lane Legacy ground beef
2 Tablespoons flour
1 1/2 cup diced tomatoes
1 cup heavy cream
4 oz mozzarella cheese, grated
4 oz sharp cheddar cheese, grated
1/2 - 1 teaspoon pepper
1/4 teaspoon cayenne pepper, optional
INSTRUCTIONS:
Cook pasta according to package directions.
In a saucepan, sauté the garlic and thyme, for about 1 minute in 2 tablespoons butter.
Add onions and continue cooking for a minute.
Add beef, salt, and pepper. Cook, until meat is browned.
Sprinkle 2 tablespoons flour over the beef mixture and cook for 1-2 min.
Add in the tomatoes and cook for another 2-3 minutes. Throw in pasta and cream. Cook for another 2 min until the ingredients have been fully incorporated.
Stir in more than half of the cheese (leave the rest to sprinkle on top)
Transfer to a greased 2-quart baking dish. Sprinkle remaining cheese.
Bake, uncovered, at 350° F for about 20 -30 minutes or until casserole is heated through and top is slightly browned.
Remove and let rest for a few minutes, then serve!
