GROUND BEEF CASSEROLE

INGREDIENTS:

  • 2 cups uncooked noodles of choice 

  • 2 Tablespoons unsalted butter

  • 1 Tablespoon minced garlic

  • 2 teaspoons fresh thyme

  • 1 cup finely diced onion

  • 1 pound Lane Legacy ground beef

  • 2 Tablespoons flour

  • 1 1/2 cup diced tomatoes 

  • 1 cup heavy cream

  • 4 oz mozzarella cheese, grated

  • 4 oz sharp cheddar cheese, grated

  • 1/2 - 1 
teaspoon pepper 

  • 1/4 teaspoon cayenne pepper, optional

​INSTRUCTIONS:

  1. Cook pasta according to package directions. 

  2. In a saucepan, sauté the garlic and thyme, for about 1 minute in 2 tablespoons butter.

  3. Add onions and continue cooking for a minute.

  4. Add beef, salt, and pepper. Cook, until meat is browned.

  5. Sprinkle 2 tablespoons flour over the beef mixture and cook for 1-2 min.

  6. Add in the tomatoes and cook for another 2-3 minutes. Throw in pasta and cream. Cook for another 2 min until the ingredients have been fully incorporated. 

  7. Stir in more than half of the cheese (leave the rest to sprinkle on top)

  8. Transfer to a greased 2-quart baking dish. Sprinkle remaining cheese.

  9. Bake, uncovered, at 350° F for about 20 -30 minutes or until casserole is heated through and top is slightly browned.

  10. Remove and let rest for a few minutes, then serve!
